Sausage Leek Soup
Perfect for a cold winter night
INGREDIENTS:
1/4 olive oil or butter
3 cups cleaned, chopped leeks
3 tablespoons chopped celery or parsley
4 cups chicken or vegetable broth
1 cup milk or half and half
1/2 cup grated Parmesan cheese
Salt and Pepper to taste
METHOD:
Cut the sausage into thin slices.
Heat oil in a large saucepan on medium heat.
Add the sausage and stir for 3-4 minutes.
Add the chopped leeks and stir for 5 minutes.
Add the celery/parsley, stir.
Add the chicken broth bring to a boil, reduce heat, and simmer for 20-30 minutes.
Stir in the milk and then gradually stir in the grated cheese.
Salt and pepper to taste.
Serves: 6
